Sobremesa is the hour after the meal — plates cleared, glasses not quite empty, nobody reaching for their keys. Spain has a word for it because Spain takes it seriously.
So do we. Sobremesa Wine brings quiet Spanish bottles into Singapore: wines raised at 750 metres on the meseta south of Toledo, some resting in clay tinajas the way the region has done it since 1851. Bottles that never reach a supermarket shelf because there was never enough to go around.
Membership is free, and the wines sit behind it — there is no browsing from the street. Buy from the shelf and you build up points. The rare bottles, the ones we take forty of, go out by allocation: to the founders first, then the Primera Mesa, then to whoever has earned their way there.
The inner table seats 45.
Fifteen founders, and forty-five at the Primera Mesa once it is full. Everyone else starts at the outer table — and that one is open.
